Chinese Steamed Buns with Goat Filling

Ingredients

For activating yeast

• 1/4 cup warm water

• 1 tsp active dry yeast 

• 1 tbsp sugar

For the bun dough

• 1/2 cup warm water

• 4 tbsp. sugar

• 2 cups flour

• 1 cup corn starch

• 2 1/2 tsp. baking powder

• 1/4 cup vegetable oil

Goat Filling Ingredients: 

• 1 pound ground goat 

• 1 tbsp. vegetable oil 

• 1 tsp. salt 

• ½ large onion, finely diced 

• ¾ tsp. Chinese 5 spice blend 

• 1 tbsp. rice vinegar 

• 2 tbsp. soy sauce or tamari

• 2 tbsp. oyster sauce 

• 1 tbsp. brown sugar 

• 3 cloves garlic, minced 

• ¼ tsp. Black pepper 

• ¼ tsp. fennel seed, whole 

• 1 cup minced cilantro
